Aloo matar
spices:
-4 tsp ground coriander
-1 tsp kashmiri chili powder or 3/4 tsp smoked paprika + 1/4 tsp cayenne (sometimes I use the kashmiri chili powder plus 1 tsp smoked paprika)
-1 tsp turmeric
-1 tsp salt
-1 tsp garam masala
-1 TBS kasoori methi
-2 or 3 tsp cumin seeds
-1 green chili pepper in 2 pieces
-2 onions, diced
-4 tsp ginger, minced
-4 tsp garlic, minced
-1 28 oz can tomatoes
-1-2 c water
-1 can coconut cream/milk
-5 small potatoes or 2-3 large, cubed
-1/2 lb mushrooms
-2 cups green peas, frozen
heat oil
saute cumin seeds in oil for 30 seconds
add chili, onions, [cook a bit], add garlic, ginger, cook 3 minutes
add the rest of the ingedients
cook on high pressure for 3 minutes (I usually end up needing 5) and do natural pressure release for 5 minutes.
