Lentil Soup
My own variation of it. Nothing spectacular.
saute with salt:
3 carrots, sliced
4 stalks of celery, chopped
2 onions, chopped
add
1 cup frozen spinach
3 cloves garlic, chopped
1 lb lentils (I use pardina/Spanish lentils when I can find them)
water
chopped parsley to taste
Cook gently for 40 minutes to an hour.
