vegan waffles

This makes 6 Belgian waffles. finally got a ratio that I like. Non-vegan waffles tend to have a ratio of 1/2 cup fat to 2 cups of flour and I don't know why many vegan recipes call for only 1/4 cup. I modified an existing recipe to up the fat & added two flax "eggs" which is what non-vegan waffles with 2 cups of flour would typically contain. 

 1 1/2 cups unsweetened soymilk 

2 teaspoons apple cider vinegar 

2 cups all-purpose flour (240g) 

1 tablespoon baking powder 

1/2 teaspoon sea salt 

1 tablespoon brown sugar 

1/2 cup melted coconut oil 

1/2 teaspoon vanilla extract or almond extract 

2 TBSP flaxseed, ground 

6 TBSP warm water 

Turn on waffle iron to preheat. Add apple cider vinegar & vanilla extract to (room temp) soy milk and let sit for a few minutes to make buttermilk sift dry ingredients together into big bowl melt coconut oil mix flaxseed & water together in small bowl, let sit for a minute or two add wet ingredients to dry and mix gently spray nonstick cooking spray on waffle iron before each waffle use 1/2 cup batter for each waffle

Steel cut oats experiment!

OK I'm doing an experiment of approx: 


1 part ground flax seeds 
2 parts quick-cooking steel cut oats 
2 parts reduced fat canned coconut milk (one can = "two parts" in what I'm doing)
5 (ish) parts water 
 and following the cooking instructions for the steel cut oats (except stirring more early on to disperse the flax seeds evenly.) 

Plan is to make this pot of cereal and then heat a small amount each morning combined with frozen raspberries (which will thin it out) 

So far, I think I could have/should have done 6 parts water because the flax seeds make things somewhat gelatinous (which I like, personally, but still.) 

Protein pancakes

I keep looking for this recipe (which I've made once or twice) and not being able to find it, so I'm putting it here.

1c cottage cheese (low sodium would be good if available)
1c rolled oats
1c eggs.
Pinch of cinnamon
sugar/vanilla extract if desired

 blend (I used a stick/immersion blender) and fry in oil. 

Belgian Waffles with oil (not butter)

I was also out of milk so I used half and half (thinned with a little water.) I did not grease my waffle iron and they came out of the iron just fine - not sure if it's something about my waffle iron or if people who say you need to grease the pan are just always lying.

    • 2 cups flour
    • 2 tablespoons sugar
    • 1 tablespoon baking powder
    • 1 teaspoon salt
    • 1 3/4 cups milk
    • 1/3 cup vegetable oil
    • 2 eggs
  • (I also added a splash of almond extract.) 1. Combine the flour, sugar, baking powder, and salt in a mixing bowl. 2. Whisk the milk, vegetable oil, and eggs together well. 3. Gradually pour the milk mixture into the dry mixture. Stir until almost blended. There will be a few lumps. 4. Pour the batter into your waffle maker (about 1/3 cup)and cook according to instructions - approximately 4-6 minutes on medium high or until the waffle maker stops steaming. Optional: To make Blueberry Waffles, pour the batter onto the waffle maker, sprinkle fresh blueberries on top, and close the lid. Cook as usual according to the waffle maker instructions.

    Dutch Babies II

    I made a dutch baby pancake using (basically) the NYTimes recipe this morning:

    • 3 eggs
    • ½ cup flour
    • ½ cup milk
    • 1 tablespoon sugar
    • Pinch of nutmeg
    • splash vanilla extract
    • dash of cinnamon 
    • 4 tablespoons butter
    •  1 apple, unpeeled
    Preheat oven to 425, mix ingredients (except butter and apples) in bowl. I blended them with an immersion blender til a bit beyond "solidly blended." Slice apples about 1/4" thick. Butter went into my old 10" cast iron, into the oven *once the oven was almost to temperature*. As soon as the butter was melted, pulled the skillet out of the oven, fanned out the apple slices in the pan on top of the butter, poured the batter on top, and stuck it back in the oven for ~20 minutes, then lowered to 300 and kept it in for only 3 more minutes because it was starting to burn.

    Verdict: good recipe, overall, and came out of my cast iron skillet easily enough even though the skillet needs to be re-seasoned quite badly. But the apples didn't really cook enough. Some recipes for dutch babies with apples suggest you cook the apples a bit first but I figured I'd try it without doing that because less work is nice if the finished product doesn't suffer. But I bet this would have been better with more thoroughly cooked apples. Such is life.

    Whole Wheat Belgian Waffles

    This recipe came out pretty well. I used about half a cup of batter for each /side/ of the waffle iron, and it yielded 6 waffles (with a little extra batter.)

  • 1 1/2 cups white whole wheat flour (from Trader Joe's)
  • 2 teaspoons baking powder (**the next time I cut this down to 1.5 tsp so they'd be a tad less airy. I think I prefer that.)
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 large egg
  • 1 1/2 cups lukewarm milk (I warmed it in the microwave for 30 seconds in a glass cup - would have done it longer, the butter still re-solidified a little)
  • 1/3 cup melted butter  (I used salted and omitted added salt)

  • Preheat your iron while you make the waffle batter.

    Whisk together the flour, baking powder, salt, and sugar.
    In a separate bowl, whisk together the egg, milk, and butte
    Mix together the wet and dry ingredients, stirring just until combined. (I used a spatula)The batter will be a bit lumpy; that's OK.
    Cook the waffles as directed 

    I used not-the-hottest setting. (4/5?) I think something more like 3.5/5 would have been better - the first few were a tad overdone.

    I ate them topped with sour cream (sweetened with some sugar) and frozen strawberries, defrosted.  

    Pumpkin waffles

    They are awesome. I had a container of pumpkin that was about 1.5 cups, so I multiplied the recipe by 1.5. I also didn't grease the waffle iron because mine doesn't seem to need it. And we added some chopped walnuts. Other than that I followed the recipe exactly. They were spicy and not too sweet, which was nice.

    Waffles!

    I found a Vitantonio brand belgian wafflemaker on the street, so naturally I had to try it out.


    I used this recipe, which someone on the internets said came with their Vitantonio waffle iron.

    I used 1/2 cup of batter for each side of the waffle iron (i.e. for each waffle) and that seemed just about right. I believe this made 8 waffles.


    "Quick Waffles"
    3 Eggs
    1 C Milk
    1/2 C Melted Butter or Margarine
    1 Tbsp Vanilla
    2 C Flour
    1/2 tsp Salt
    1 Tbsp Baking Power
    2 tsp Sugar

    Beat whole eggs in a bowl until thick *I used a fork*
    Beat in milk and melted butter and vanilla
    Combine remaining ingredients. Sift into egg mixture (I just added it slowly) and beat well (I stirred and allowed some lumps for fear it'd get too tough.) Bake and serve.

    I made them on the second to highest setting for my iron and that worked well. I did not grease the iron at all.

    Dutch Babies

    I made a Dutch Baby (man, the name is silly) pancake for brunch today using this recipe: http://allrecipes.com/recipe/dutch-babies-ii/

    I don't have a 10" skilet so I made it in a 9.5" Pyrex pie pan. I used an electric hand mixer instead of a whisk, and I didn't sift the flour because I have no sifter (or even strainer, sigh. This is not a well-equipped kitchen.) I added a splash of vanilla extract and some sugar to the batter.
    It came out looking like this:

    100% whole wheat muffins

    2 cups whole wheat flour
    1/2 cup white sugar
    3 teaspoons baking powder
    1/2 teaspoon salt
    3/4 cup milk
    1/3 cup vegetable oil
    1 egg

    Preheat oven to 400°F. Grease a muffin pan (for 12 medium size muffins.)

    Combine flour, sugar, baking powder, and salt in one bowl.  Combine milk, oil, and egg (beaten) in another.  Add wet ingredients to dry and stir to combine - don't overmix. 

    Spoon/ladle into prepared pan, bake for 20-25 minutes or until toothpick is clean. 

    *I added 1/3 c. chocolate chips and a few dashes of cinnamon.  I also used stone ground whole wheat flour because that's what I had around.  Worked fine. Tasted good.  Texture was good, though not overly moist.

    I don't believe in using pancake mix. I'm stubborn and it seems like such a waste.

    Every recipe has slightly different proportions, it seems...today's was:

    dry:
    2 c flour
    3 TBS sugar
    4 tsp baking powder
    1 tsp salt

    wet:
    2 eggs
    1.5 c milk
    1/2 c melted shortening (I used half butter, half oil)
    splash of vanilla

    They came out decent, though some were overly puffy. I used a teflon pan, though, which I'm not used to, and the only pan-grease I used was some butter--I ran out of oil.
