Black Beluga Lentil Salad

(Loosely based on the packaged lentil salad they sell at Peet's.)

1 cup black beluga lentils
4 cups water
1 small shallot, diced
~1 tbs chopped parsley
1 carrot, grated fine
~2 oz feta cheese
half a lemon's worth of juice
red wine vinegar to taste
olive oil to taste/preference
salt to taste
pepper

Put lentils and water in a pot, bring to a faint boil, turn down to a simmer and cook for 5 minutes. Add chopped shallots and cook for 10 more minutes, til cooked but still firm. (You can also just add the shallots after cooking, but raw onion is a bit sharp for me.)
Drain. I did not rinse.

Put into bowl. Add remaining ingredients (Some recipes say to let the lentils cool first but I did this while still warm.) Stir, eat.

Half of this recipe (which feels about like a portion if it's all you're eating) contains ~370 cal 6g fat, 29g protein, 51g carbohydrate and 20g fiber.I did not include olive oil in this so probably slightly more fat.  Going forward I'd be inclined to use more olive oil to make it a bit more balanced/less carbohydrate-dense, though I didn't measure how much olive oil I used, so...

Lentil Feta Salad

(from the LJ vegrecipes community, with no modifications - though it's okay with regular onion instead of red)

1 cup uncooked lentils
1/2 red pepper (about 1/2 cup)
2 celery stalks
1/2 medium red onion (about 1/3 cup)
1/3 cup flat leaf parsley
4oz feta, crumbled
2 TBSP olive oil
2 TBSP lemon juice
3/4 tsp salt
1/4 tsp pepper
2 cloves fresh garlic, minced

Place lentils in a large pot with enough water to cover plus a few inches. Bring to a boil, and cook until lentils are tender, about 15-20 minutes. Drain and rinse with cold water in a colander to cool. Let stand for a few minutes to drain well.

Finely chop all veggies & feta, put in bowl. In a separate container mix olive oil, lemon juice, garlic, salt & pepper. Once lentils are cooled add them to the bowl with the veggies. Pour the olive oil/lemon juice mxture, mix well. Allow to sit in fridge a few hours at least before eating. If you made it the night before that would be ideal.

Black Bean Wraps

Recipe from Giant Food's website/weekly circular, with modifications

They say to microwave each wrap on high for 1 minute, but we ate them cold. It's a nice -cold- summer dish that doesn't involve heating up an oven or standing over a stovetop.

9 oz. fresh baby spinach
8 (8-inch) tortillas
1 (19 oz.) can black beans, rinsed and drained
2 plum tomatoes, chopped
2 avocados, pitted and sliced
1/2 cup salsa
Sour cream, grated cheddar cheese (optional)

Divide and layer spinach among tortillas. Combine black beans, tomatoes, avocados and salsa in a bowl. Divide the bean mixture among the tortillas. Fold in the ends and then roll to close. Serve with sour cream and cheddar cheese if desired.

Sesame Chicken Salad

Yes, I eat chicken on the odd occasion. No, I couldn't tell you what defines those occasions, because I don't know.

Sesame Chicken Salad


2 TBS sesame seeds
1/4 cup canola oil
3 TBS lemon juice
1.5 TBS soy sauce
1.5 TBS rice vinegar
3 cloves garlic, minced or pressed
2 tsp finely minced fresh ginger
1/2 pound snow peas
1/2 pound bean sprouts
3 to 3.5 c. shredded cooked chicken

Toast sesame seeds in a small frying pan over medium heat, shaking pan often, until seeds are golden (about 5 minutes). In a large bowl, mix seeds, oil, lemon juice, soy sauce, vinegar, garlic, and ginger until blended. I usually double the amount of lemon juice, soy sauce, vinegar, garlic, and ginger--basically, everything in the sauce except the oil.

Fill a large pan halfway with water; bring to a boil. Add pea pods and bean sprouts; cook just until water boils. Drain, rinse with cold water, and drain again. Combine vegetables, chicken, and oil mixture and stir.

It's better after it's had a chance to sit for awhile.
